Very easy to make, and a little different from the norm!


To feed 4 people, you need

4 chicken breasts (frozen is fine)
1 box of whole wheat penne pasta
1 small jar of mushrooms, drained
1 24 ounce jar of Bertolli vodka sauce


Boil the chicken breasts for about 30 minutes, or until they're completely done. Pour out the hot water and replace with cold, to cool the chicken down quickly.

Boil the penne pasta as directed.

While waiting for the penne, discard the water that the chicken is in, then shred the chicken breasts into bite-sized chunks. I usually just do this by hand, but you can cut it up if you want.

Put the chicken chunks in a large frying pan over medium heat. Oil is not needed. Let the chicken cook for just a few minutes, stirring regularly, then add the vodka sauce and mushrooms. Let simmer for a few minutes, to get the sauce nice and hot.

Now, just pour the penne into a plate, and spoon the chicken and sauce over it!

Optional ingredients. To shake things up a little, you might add broccoli, onions, or red peppers. Just cook them in the frying pan with a little olive oil until they're done, then add the chicken and sauce.
