Couldn't wait till St. Patricks Day. This is the traditional boiled dinner. I prefer it sided with the Corn beef as a sandwich.


3 lbs Corned Beef Brisket with seasonings
1 head of cabbage
1 package fresh carrots
2-3 lbs small red potatoes
soft rye bread
butter
1 package sliced baby swiss cheese
1 small can sauerkraut heated throughly


Wash potatoes set aside.
Peel carrots cut in half set aside.
Cut and core green cabbage into 8 wedges.
Combine vegetables in crock pot and place
corn beef brisket rubbed with packaged seasonings on top of vegetables .
Pour 1 cup water over all, cook on low for up to 7 hours.
Take carrots and potatoes out when fork tender.
Keep warm in oven.
Remove corn beef when done.
Cut into thin slices.
Butter two pieces rye bread turn with buttered sides together.
layer sliced corn beef, sauerkraut, top with swiss.
Add as much as you like.
pan fry sandwich as you would a grilled cheese sandwich.
Till heated and cheese is melted.
Side with drained boiled vegetables and Enjoy!!
(You can use 1000 Island dressing to side sandwich but why ruin a good thing)
